For reducing the risk associated with food poisoning due to uncooked or less cooked foods, the egg pasteurization method is used. During the pasteurization process, the egg is kept at 140F for 75 minutes. As a result of high heat used during the pasteurization process, food products like cheese, milk, juices, are protected from bacteria. But only liquid eggs could be pasteurized. Egg pasteurization is done by various processes, namely, heat without chemicals, heat plus hydrogen peroxide, hot room treatment of dried egg white, heat plus vacuum. The pasteurized egg is used in the food and beverage industry for manufacturing dietary food supplements, mayonnaise and dressing, noodles and pasta, dairy products, desserts, meat and fish, pet food, and others.
